Pecan Season is COMING! Are You Prepared?
Good Day!
I would love to talk about a nut cracker that is going to make your life so much easier. Pecan season is really just around the corner. In the past, have you been cracking all of those pecans by hand? I did for a long time. Sometimes my hands would hurt so badly that I wondered if the effort was worth it.
I like to make all sorts of candies, pies, and breads during Fall. How Do You Gather Your Nuts?
As the time draws near to start your nut gathering, do you start dreading the idea of bending over and stooping to gather all your yummy nuts? We here at Southern Garden Tools don't like that idea either! We like to help make things easier and more efficient for you. So today I will introduce you to your new best nut gathering friend. Meet the Nut Wizard! Now that introductions are out of the way, let's get down to business. Before I start telling you how much I love the Nut Wizard and how many times my back has said thank you, here is a short video.
Isn't that neat? It is so super simple to use. We have Nut Wizards available in a variety of sizes for a variety of nuts and even pine cones. Mini Nut Wizards are perfect for little beechnuts or even .22 and larger brass casings from fired gun rounds. Small Nut Wizards are great for pecans, hickory nuts, acorns, and even crab apples. I use the Medium Nut Wizard to gobble up English walnuts, chestnuts and even golf balls or shotgun shells. The Large Nut Wizard is extremely versatile when it picks up black walnuts, apples, pears, or even tennis balls. We even offer a Pine Cone Wizard that can grab up all those pesky pine cones in mere minutes.
I love the design of the Nut Wizard. It features metal wires which spread to capture your nuts, fruits, casings, and balls. Once inside, they are trapped so they stay put until you are ready to empty the basket. Thanks to this metal wire design, when you are ready to empty, simply attach a nut dumper (included with the Nut Wizard) onto any 5 gallon bucket, place the wire basket on the dumper, and give a slight turn to the right. Everything will cascade right out into your bucket. Truthfully, I have also seen them attached to trash cans and other buckets. I even attached one to an old kitty litter bucket last week when I was showing my Mother-in-Law how it works. Now, what about your back? I know, I promised a thankful back. The Nut Wizard has a 4 foot handle! Stand comfortably while the rolling wire basket does all the hard work.
Now, If I may, I would like to quote a little Shakespeare, "Is A Nut Wizard By Any Other Name Just As Sweet?" Oh, that isn't correct is it? Well, you understand what I was trying to say and to answer that question, No, it just isn't. I tested out the Master Cracker here in the shop one day last week, nearly all day. I put it together (very simple) as if I had just received it on my front doorstep, then proceeded to round up all the nuts I wanted to test out. I was eager to see if it really does what it promises. Our makers of the Master Cracker proudly boast minimal shell shatter. This is important in nut cracking for a variety of reasons. Shell shatter can just make a mess of the nutmeat and you won't get those intact halves like you may desire or you are digging to separate shell and nutmeat. Shell Shatter can also be slightly dangerous. Why on Earth would you want to have a nut cracker that recommends protective eye wear when you use it? You can crack all nuts, big and small, with the Get Crackin'. I tested out many different sizes of nuts here in the office. I had little acorns, pecans, and big walnuts. I didn't have a problem cracking any of them. I just placed the nut in the groove, pulled the lever down, and had a nicely cracked nut. I did have to practice a little bit to get the proper placement of my nut down, but it didn't take long before I was cracking away. I was even more thrilled when I realized that I didn't need any nutpicks either! I could gently pull the shell off of my nut and enjoy yummy nutmeat. If any nuts decided to be pesky and give me a problem, I just gave another quick pass through my trusty Get Crackin'. The lever-fulcrum action allows precision pressure control which minimizes shell shatter and increases the larger amounts of nutmeat you can enjoy from your trees.

Mexican Corn Salad
Mexican Corn Salad
Fresh corn is such a delightful treat. When I was looking for variety from the standard corn on the cob, corn off the cob, and creamed corn, I came across this refreshing recipe. Mexican Corn Salad is a great addition to any BBQ, taco night, or just as a different side item. I couldn't seem to get enough of this savory dish when I made it and I hope you love it too. Following recipe as found on the Schwans website.
Ingredients:
- 4 cups sweet corn kernels
- ½ cup diced red pepper
- ½ cup diced green pepper
- ½ cup diced red onion
- 1 cup mayonnaise
- 1 cup shredded cheese
- 1 cup crushed chili cheese corn chips
Directions:
- Combine corn, peppers, onions, mayo, and cheese.
- Cover and refrigerate for 30 minutes or until chilled.
- Stir in crushed chips right before serving.
I like to make this dish ahead and wait until I am ready to serve it before adding the corn chips. The crunch they provide is wonderful. When I make this dish, my Progressive Food Chopper gets quite the work out. It makes prep so simple and easy while saving me time. You can use canned corn if you prefer, I have in a pinch, but fresh corn really stands out in this dish. For my ears of corn I use my EZ Chopper board to cut the ends of the ear off before I husk it. I use a cute little de-silker brush to remove all the silk, and then use my Lee's Corn Cutter to remove all the kernels of corn. It sure beats using a knife to remove all of those kernels. We have calls pouring in from folks who are putting away their fresh corn and are searching for a more efficient way to get it done. We are so glad that we can help them save so much time. Whether they want to just make creamed corn for their family dinner, or store away bushels, we have just what they wanted. Now, I will share some of those item with you.
Family dinner with creamed corn is always welcomed at our home. I think it must be our favorite side dish ever. We use Lee's Corn Cutter on a regular basis. Ours has been passed down for a few generations and still works wonderfully. Invented in 1939 by J.B. Lee, this is a simple, effective design that has withstood the test of time. We husk and de-silk our corn then firmly run it over the steel blades and watch as the creamed corn and juices fall right into our pan. It is even adjustable for whole kernels. This is a must-have kitchen tool.
What if you want to make extra and put some away in the freezer? Kerry's Kernel Kutter Kit fits the bill. Think of it as kernel cutting, McGyver style. A powder-coated metal handle design with rivets holding the cutter in place makes a sturdy and durable tool. The Kernel Kit comes with a specially designed cob screw that is longer with deeper grooves to give a firm grip on your ear of corn. Place the cob screw in your power drill, screw it into your ear of corn, and pass it through the kernel cutter. It is simple as that. Lastly, for an All-in-One system, we have the Thomas Corn Cutting System. It is a "table" that you place over a large waste can. It cuts, husks, and creams the corn or gives whole kernels. Husks are already in the waste can for you, so clean up is simple. It really doesn't get any easier than that.

Nut Cracking with Power Tools

You are in luck! We have just the thing you will want to know about and it is called the Drill Cracker. Super speed nut cracking and shelling power for nuts of all sizes. The Drill Cracker boasts that is can crack a 5 gallon bucket worth of nuts within 5 minutes. You know I had to see that for myself!
I watched a few short videos on Drill-Cracker.com to make sure I was putting everything together right. To say I am unsure of power tools would be an understatement. I normally find the nearest guy and recruit them to help me, but today I wanted to do it on my own. The part I was unsure on was actually hooking up the drill to the nut cracker. Everything else seemed pretty clear. Thanks to Drill-Cracker.com, I was able to watch an instructional video and realized I was making it harder than it actually was. No surprise. You can use black or English walnuts, hazelnuts, macadamia nuts, almonds, and possibly even pistachios. We haven't actually tried out the pistachios yet, but we have been given reports from happy customers that have tried them and were very pleased. Most of the time, you will have to make a few passes through the Drill Cracker to make sure all of the nuts are just how you want them. I strapped on my safety goggles (in case of dust debris) and I did 3 passes. You can see how the piles all change with each pass. 1st pass through yielded about the same amount of completely empty shells and shells with a nutmeat left inside. You can also see how much nutmeat was completely cleared from the shell. By the 3rd pass, you can see my huge pile of shell and nutmeat and little pile of shells with nuts still inside. If you are wondering what that 4th small pile is at the bottom, it is the little dusty debris or tiny nutmeat pieces. The whole process was less than 10 minutes for a 5 gallon bucket. So, yes a 5 gallon bucket with 1 pass in 5 minutes was true. That time can all depend on how eager you are to sort the shells and nutmeat. I worked at a steady pace. For a 5 gallon bucket, 10 minutes is a very short amount of time and to have whole or good size pieces is even better.
The Drill Cracker is a simplified version of high speed industrial nut crackers that big cracking facilities use. Now, you can have the same cracking power at home, or even set up at a Farmers Market Table. All you need is a 3/8" or 1/2" variable speed drill to attach to the cracker and you are ready! The Drill Cracker has a specially made hood to help contain any shell fragments that may normally fly about. We do strongly recommend wearing safety goggles just in case any debris does decide to fly back up. It also has a turn screw that allows you to adjust the size of the throat so you can crack hazelnuts and then walnuts with just a minor adjustment.
